Turkey and Vegetable Parsnip Topped Pie

This is a great dish for kids, a slightly healthier, reduced calorie and fats version of a cottage pie, using turkey mince instead of beef (or lamb in a shepherd’s pie) and topped with mashed parsnip instead of potato, for an extra helping of their five-a-day. 

I know many parents say how fussy their kids are and that they detect a hidden vegetable from a five-mile radius, luckily not so much at our house, mine both readily tuck into most vegetables but I’m always looking to offer more and ensure they have a well balanced diet. 

You can top this pie up with any number of vegetables, I use diced carrots, frozen peas and sweetcorn, sliced celery and of course the mashed parsnip topping. You could top up with lentils, sweet potato, courgettes, squash, aubergine - the list is endless, just include your kids’ favourites. 

The below makes enough for 4-6 ramekins of the Turkey & Veggie Parsnip Topped Pie or one large dish, and it freezes well too so is great for batch cooking for busy parents, and let’s face it whether you work or are at home with your kids all the time, we’re all busy!



Turkey and Vegetable Parsnip Topped Pie


Here’s how;

  • 300g turkey mince
  • 1 onion
  • 2 sticks celery
  • 1 large carrot
  • 2 handfuls frozen peas
  • 2 handfuls frozen sweetcorn kernels
  • 1 Knorr Beef Stock Pot
  • 1/2 tsp cinnamon
  • 1/2 tsp black pepper
  • 3 large parsnips
  • 1 tbsp Grana Padana or other hard cheese 
  • Couple of drizzles olive oil

Firstly peel and dice the parsnip and bring to the boil in a pan of water. Once boiled, you’ll need to cook for another 10-15 minutes, test with a fork to see if it’s soft enough to mash. Mash with a little drizzle of olive oil and set aside for the moment.

Now pre-heat the oven to 180.

In the meantime add another drizzle of olive oil to a pan and place on a low heat. 

Peel and dice the onion and finely slice the celery, add to the pan to gently saute. 

Peel and dice the carrot and add to the pan.

Once softened, add the mince and allow to brown. Break up gently with a spatula to avoid it all clumping together. Once it has started to brown, add the black pepper and cinnamon.

Now add the peas and sweetcorn and any other vegetables you’re adding. 

Make up the Knorr Beef Stock Pot or alternative stock, to about 50-75ml. Pour it over the meat and allow to simmer for ten minutes. 

Remove from the heat and spoon the meat into ramekins or a larger pie dish. 

Now spoon over the top the parsnip mash and smooth down flat with the back of a spoon.

Finally scatter over the Grana Padana and place into the oven to bake for 30 minutes or until the topping is golden brown. 

Ensure to remove from the ramekin for serving to allow it to cool quicker for children. Enjoy!

Curried Parsnip and Spinach Soup

Another delicious soup recipe which formed part of my 'Seven Days of Soup' souping/liquid diet adventure pre-holiday and really helped boost my postnatal weight loss.

The parsnips make for a hearty, almost creamy soup but without the heavy calories of a cream-based soup and the sweetness is offset by the curry and spices - a traditional flavour pairing, but one that works time and time again. You can up-spice if you're a chilli fiend or make slightly milder if you have some diners that are less tolerant of heat.

Guarantee you'll make this more than once after the first time - so easy, so delicious and moreish. You can stir through a tablespoon of crème fraiche or sour cream at the end if you want a slightly richer finished article - but be warned it ups the calories and fat content significantly.

Curried Parsnip and Spinach Soup
 
Here's how:
  • 1 white onion
  • 1 large clove garlic
  • 400g parsnips
  • 1.5 pints vegetable or chicken stock
  • 1 heaped tbsp curry powder
  • 1 tsp garam masala
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1 tsp turmeric
  • 1 bag spinach
  • 1 tbsp coconut oil

Firstly peel and dice the onion and mince the garlic and add to a heavy-bottomed pan with the coconut oil and place on a low heat to soften.

Peel the parsnips and cube then add to the pan with the curry powder, salt, pepper and all the spices. Stir so all parsnips are slightly covered in the spices.

Make up the stock and cover the parsnips. Place the lid on and simmer for 30 minutes.

Allow to cool before blitzing with a blender or Nutribullet and then return to the pan to re-heat. Add the washed spinach one minute before dishing up as it will cook incredibly quickly. If adding crème fraiche stir through the entire pot before dishing up. Enjoy!

Winter Vegetable Soup

Here's a lovely meat-free soup recipe perfect for a speedy mid-week supper or lunch in the cold winter weather.

The beauty of this soup, is you can add whatever vegetables you have lurking in the fridge, odds and ends welcome.

This particular version makes enough for two hearty portions of around 370 calories per portion so perfect if like me you are on a healthy eating regime or fat fighting. 


Winter Vegetable Soup
Here's how: 

  • 1 onion
  • 1 clove garlic
  • 1/2 red chilli (optional) 
  • 1 bay leaf
  • 3 carrots
  • 3 parsnips
  • 2 leeks
  • 50g peas (I used Birdseye Frozen Peas
  • 1 Knorr Vegetable Stock Pot made up with 1 pint water (or other vegetable or chicken stock)
  • Black pepper
  • 1 tsp coconut oil

Firstly add the coconut oil to a thick bottomed pan and switch onto a low heat.

Now peel and finely dice the onion and garlic and add to the pan. Slice the chilli if you are using and add to the pan.

Allow to soften whilst you prepare the vegetables: peel and dice the carrots and parsnips and slice the leeks.

After a few minutes add the leeks to the pan and allow to gently fry for two minutes before adding the carrot, parsnip and peas. Now top up with the stock, add the bay leaf and a generous pinch of black pepper.

Pop the lid on and cook on a gentle heat for thirty minutes.

Remove from the heat and allow to cool for fifteen minutes. Now blitz with a hand blender or pop into a blender.

Return to the pan and re-heat till piping hot. Serve with crusty bread if your calorie count allows. Enjoy!
